Cooler Weather Calls for Taco Soup

One thing I do as the keeper of our home is cook for our family. I try to make healthy meals most of the time.

It has been getting cooler outside, so I thought I would make taco soup. It is simple to make, healthy, and my family gives it a thumbs up.

Normally, I would cook it in my slow cooker, but I forgot to get it going this morning. That is ok, because this meal cooks just fine on the stove.

I have used different types of meat for this meal. (ground turkey, venison, grass fed beef, ground chicken) Today I am using ground chicken because it was on sale at my local store.

The first thing I do is brown 1lb of meat with one onion on the stove. (I do this even if I put it in the slow cooker.) Once it has browned, I drain the grease off and rinse the meat. Then I place the meat back in the pot.

Then I add one large diced bell pepper and two small zucchini that has been cut up.

Next, I add one can kidney beans, one can pinto beans, one can black beans (drained and rinsed), one can of corn.

After the beans I pour in one can diced tomatoes and one can diced tomatoes with green chiles.

Finally, I sprinkle in two tablespoons of the homemade taco seasoning and two cups of water.

I mix it well and cook it on medium heat, stirring occasionally, until the zucchini and bell pepper are tender.

We usually top it with cheese and add crackers or corn chips.


Recipe
Ingredients:

1lb ground meat 
1 large bell pepper, diced
2 small zucchini, chopped
1 onion, diced
1 can pinto beans
1 can kidney beans
1 can black beans, rinsed and drained
1 can corn, or frozen corn
1 can diced tomatoes
1 can diced tomatoes with green chilies
2 Tablespoons homemade taco seasoning
2 cups of water

Directions:

Brown meat on the stove with the diced onion. While the meat is Browning, dice and chop zucchini and bell pepper. Once the meat is brown, drain the grease from it and rinse with water. Place in back in the pot. Now add the bell pepper and zucchini. Pour the pinto beans, kidney beans, rinsed and drained black beans, corn, diced tomatoes, and tomatoes with green chilies into the pot. Next, sprinkle the two tablespoons of homemade taco seasoning over the vegetables. Pour in the two cups of water and mix well. Cook on medium high until the zucchini and bell pepper are tender.

Serve in a bowl and top with cheese and crackers or corn chips.

This makes about 8 servings for us. We have this for supper and leftovers for lunch the next day.

If you prefer to make this in the slow cooker, you can brown your meat with the onion, drain and rinse. Place all of the ingredients in the slow cooker and mix well. I stir it occasionally, and I cook it on high for 3-4 hours.
